The peanut is not really a nut. It is a leguminous plant, just like peas and beans, whose fruit grows in the soil. The flower produces a stalk which penetrates the soil where the fruit ripens.

Peanuts are a source of unsaturated fatty acids, just like for instance olive oil: more than 75% of the total fat content is unsaturated. Peanuts contain 25% proteins.

Peanuts also contain resveratrol and other phytochemicals. Recent studies on this plant element, also found in red wine and grapes, show that resveratrol may help reduce the risks of heart disease and cancer. The presence of vitamin B as niacin and thiamine has a tranquillizing effect. Peanuts are an excellent food source of vitamin E.

Peanuts can cause a severe allergic reaction. It is very important to state the presence of peanuts as an ingredient.
